Our house speciality is cocktails and what we call our 'Best of British'. Our menu will tell you more and our charming bartenders will tell you how. Our mixologists are are perfectionists when it comes to the right ingredients. Chameleon showcases the classics, house specialities and its own unique creations.

Apple Walnut Martini

£6 The English apple is already responsible for good old cider, but we think apples still have so much more to give. Here we have shaken together fresh apple juice, our own homemade walnut syrup and lots of vodka.

Blackberry Rita

£6Mexicans don’t have blackberries, but lucky for us we do. Blackberries, lime juice, agave nectar and tequila. Served either frozen or on the rocks.

Lavender Gin Iced Tea

£7This fragrantly fantastic long was created with inspiration from London Dry Gin. Gin, rose petals, lavender syrup, vanilla rum, mandarin blossom vodka and citrus juices. Served long and on the rocks, topped with Champagne.

Black Forrest Julep

£6This award winning drink was created by Chameleon’s own John Ennis. Sugar, black cherries, bourbon and chocolate liquor shaken and served over crushed ice.

Lemon Gingerbread and Ice Cream Martini

£6A lovely dessert and an even better drink. A shaken combination of fresh ginger, lemon vodka, caramel liquor, frangelico and vanilla ice cream.

English Trifle Milkshake

£6A delicious medley of sherry, Amaretto, strawberries and ice cream.

Bakewell Tartini

Plum Mai Tai

£6This is a British twist on a tiki classic. Fresh plums muddled then shaken with gold rum, orange curaçao, orgeat and lime juice.

English Rose Martini

£6A delicate balance of Punt e Mes, gin and rose petals.

£6Strawberries, Amaretto and fraise blended with vanilla ice cream.

Margarita

£6The USA’s number one selling cocktail. A fantastic mix of tequila, orange liquor, lemon and lime juices and agave syrup. An absolute must for anyone seeking the ultimate in drinking pleasure. Choose either on the rocks or frozen. Available also in strawberry or banana.

Bronx

£7This is said to be the first ever cocktail to use fruit juice. Named after the Bronx Zoo, New York, it combines gin, sweet and dry vermouth shaken with orange juice.

Absinthe Cocktail

£7Sugar, absinthe and water with a bit of theatrics.

Hurricane

£6A drink so popular during the tiki up rising that they even named the glass after it. Lots of rum, passion fruit, pineapple, orange and lemon juices. Plus a dash of bitters.

Sazerac

£7First made in 1793 and it still finds itself on menus all over the world. Absinthe, bourbon, bitters and sugar. Topped with a lemon twist.

Aku Aku

£5Aku Aku is the secret to Easter island and if you curious to learn more ask your bartender. Rum and peach liquor, blended with mint, pineapple and lime juice.

Aviation

£6Almost a hundred years old and still going strong. Gin, lemon juice and maraschino. Shaken and served straight up.

Blue Hawaiian

£6The taste of paradise and escapism for anyone wishing they were on a beach somewhere in the tropics. Rum, cream of coconut, pineapple juice and blue curaçao.

Alamagoozlum

£7First published in 1948 by David Embury, in the great cocktail book that is ‘Fine art of mixing drinks’. Genever, yellow chartreuce, wray and nephew, Grand Marnier, sugar and bitters.

Angel Share

£6Don’t order that cognac just yet. This is a fantastic way to enjoy the delights of a warm brandy. Tawny port, cognac, chartreuce and walnut syrup.

Barne MInt Baileys

£5Oreos blended with Baileys, crème de menth and vanilla ice cream.

Bella Donna Daquiri

£6A pleasant twist on a great classic. Dark rum, Amaretto, lime and lemon juices served straight up and dusted with cinnamon.

Mango Float

£12 (£5 refill)One of the more unusual drinks on this list and is defiantly worth a try. A frozen cored pineapple filled with overproof rum, lime juice, fresh pineapple, honey cream, almond syrup and grapefruit soda. Topped with a scoop of mango sorbet.

Fantasy Freeze

£5It takes 7 different liquors blended together to make this marvellous concoction.

Chicago Coffee

£6This drink is somewhere between a liquor coffee and a coffee frappe. Coffee liquor, Baileys, vanilla ice cream and hot coffee blended and poured on to flaming brandy.

Diplomat

£6Dry with a slight edge of sweetness. Punt e Mes, dry vermouth and maraschino served on the rocks.

Red Caprioska

£5A relation to the mighty Caipirina. Fresh raspberries, lime juice and sugar shaken with vodka and chambord.

Jalisco Hat Dancer

£6The story goes that Mexicans have tall tale of a chilli so hot, that it makes the hat dance right off your head when eat it. Reposado tequila, agave nectar, bitters and hint of chilli and lime. Stirred slowly together.

Peach and melon flavours balance nicely with well integrated oak character. A touch of creaminess sets the wine apart.

Oyster Bay Sauvignon Blanc, NZ 2006 13% £20
This classic Kiwi sauvignon starts with an abundant bouquet of gooseberry. Fresh acidity and flavours of tropical fruit refresh the palate, leading to a crisp finish.

Classic Californian chardonnay revealing varietal flavours of peach and pear with an intense but soft mouth feel. Light and creamy oak with a hint of vanilla and spice round off this robust wine.

Charles Viénot - Meursault, Burgundy 2006 12.5% £60
Mellow golden colour with distinct aromas of oak, vanilla, toast and walnuts. Richly complex full bodied wine with plenty of creamy vanilla oak on the palate, leading to a long finish.

Cloudy Bay Sauvignon Blanc, NZ 2006 13.5% £48
Pale straw green and enticingly fragrant, this exceptional wine offers a complex nose reminiscent of a fresh summer fruit salsa but with notes of fennel, flint and pastis. The sharp, rich, zesty palate is laden with fresh fruit and lingers on to a characteristically long finish.

Green and gold, this beautifully complex wine offers aromas of flowers, freshly cut hay, toasted nuts and a hint of coffee. Sophisticated and graceful, this wine is pure class.

An enticing nose of cherries, chocolate and charred oak. Good lean acidity on the palate with a nice savoury, herby finish.

Leonard Fourchel, Brouilly, Beaujolais 2005 12.5% £19
Ripe red and black fruit aromas dominate the bouquet, which then leads to a cherry-pie flavoured palate underscored with a clean mineral acidity that helps make this wine so refreshing.

Ventisquero, Merlot Clasico, Chile 2005 14% £14
Deep purple, this is an intense young wine. Plums and cherry mingle with cinnamon, tobacco leaf and toffee. It is balanced and soft with a full on palate and a rich velvety smooth finish.

McHenry Hohnen, Margaret River Shiraz, Australia 2005 13% £22
Rich aromas of currant muffin with plum and berry flavours. Savoury notes lead to a lush palate bound together with firm tannin and acidity.

Marques de Murrieta, Tinto Reserva, Rioja, Spain 2003 13% £33
Made using only hand picked grapes from the Rioja Alta region of Spain this classy wine has spent two years in American oak barrels. Dense fruit and spicy complexity lead to a refined palate of cherry fruit with fine tannis and firm acidity.

Frei Brothers, Cabernet Sauvignon, California 2001 13% £30
The Cabernet Sauvignon was crafted to express the best of Alexander Valley, showcasing ripe, rich, jammy, dark red fruit flavours balanced with a touch of sweet vanilla and toasty oak.

This is a lively, full bodied Nuit St Georges with black cherry fruit and notes of rich plum. It nonetheless remains superbly fresh with a clean mineral finish.

Château Léoville-Barton, St Julian, Bordeaux 1999 12.5% £96
This second growth wine is very dark red with wonderful smoky aromas immediately showing its class. Complex but approachable, this wine reveals layers of fruit beautifully balanced with mature tannin and firm acidity.

Château Duhart-Milon, Pauillac, Bordeaux 2003 13% £87
Open and giving nose of dark fruit. A full bodied palate with dark cassis fruit, earth and subtle tar notes. Nicely framed with gripping tannins with a long, anise filled finish. Classic Pauillac wine now showing its full potential.
